Ambient Mobs
Butterflies
With a wide range of colors all stemming from the dye colors in game, these beautiful mobs flutter near the surface of your Minecraft world. They can be caught using a butterfly net where they then become a placeable entity that you can carry with you and place anywhere in your world. Perhaps you should build them a butterfly house to live in.
The 16 basic dye colors are the most common type of butterfly you can encounter.
Some butterflies can exclusively be found in structures.
Other rare butterflies can be found across different dimensions.
Passive Mobs
Big Beak
These prehistoric birds make transportation a breeze. They are naturally the fastest mob you can ride other than horses, donkeys and mules; they have the best movement speed you can obtain (0.3375). Scaling steep mountains is no problem for this mount as they also have the best jump strength possible in vanilla (1). Big beaks are also capable of gliding for some distances, never tiring out; neither you or your mount take fall damage as they float back down to the ground. They can be equipped with a chest to transport items.

Corrupted Cauldron
This boss, directly inspired by the Corrupted Cauldron from Minecraft Dungeons, can be fought and summoned at it's summoning circle. These structures can be manually built or have a chance to naturally generate in the soggy swamp biome's soggy village.
Throw an eye of ender into the middle water cauldron to start the fight.
Once the battle begins, it casts fire around the mossy cobblestone where it was summoned dealing magic damage to anyone caught within the circle during the attack. It's second ability relies heavily on the use of it's summoned minions, the conjured slime. The barrage of their magic projectiles can decimate you easily if not dealt with first. The Corrupted Cauldron briefly regenerates health after it's fire attack.

This hostile rabbit variant is another unused mob exclusive to Java edition that attacks players and wolves. There is a 0.1% chance of one spawning in the world around other rabbits.
Nameless One
Can be summoned by throwing a skeleton skull onto a soul campfire. This boss is directly inspired by the Nameless One from Minecraft Dungeons.
